Fall is here, ushering in apple picking season! It is also time for the Jewish New Year (Rosh Hashanah), when apples and honey, (or agave for us vegans), are eaten to welcome a sweet new year. To celebrate the season and its bounty, try this apple pizza that serves great as a dessert or a snack.
This “pizza” uses phyllo dough as a crust, and is brushed with melted Earth Balance and dusted with cinnamon sugar before adding on the sweet toppings of apple slices, walnut pieces, and shredded coconut. Drizzle on a little agave on top before baking this “dessert” pizza, which cooks in just 10 minutes.
Ingredients
- 1 package dairy and egg free puff pastry (such as Aussie Brand)
- 2 red apples (any variety), finely sliced
- ¼ cup walnut halves
- ¼ cup shredded sweetened coconut
- 1 tbl cinnamon sugar
- 1 tbl agave
- 2 tbl non-dairy butter, melted (such as Earth Balance)
Instructions
- Thaw puff pastry for about 45 minutes. Roll out and spread onto a pizza baking sheet.
- Preheat the oven to 400 degrees.
- Brush the puff pastry with the melted butter and sprinkle with the cinnamon sugar.
- Lay out the apples, walnuts, and shredded coconut on the puff pastry.
- Drizzle with the agave syrup.
- Bake for about 10 minutes until golden brown.
