The sexy sustainable Spork Sisters have done it again with their recipe for Cheddar Grilled Cheese with Pimento Mayo & Spinach! Lest you think you need to go the cow-boob milk angle to get a good grilled cheese, you better check yourself (with this cheesy vegan goodness below) before you wreck yourself (quite literally, as dairy consumption is closely linked to cancer and heart disease amongst other bummers.) On a happy note, make this sandwich, it’ll make you cute and smiley like the Spork sisters.
The Ultimate Vegan Grilled Cheese Recipe
Serves 2-4
Ingredients:
- 1 teaspoon neutral tasting oil
- 1 cup tightly packed baby spinach
- Dash sea salt and pepper
- 1 teaspoon lemon juice
- ¼ cup vegan mayonnaise
- 2 tablespoons pimentos, finely chopped
- 1 teaspoon lemon juice
- Dash sea salt
- Dash finely ground black pepper
- 3 slices GO Veggie! Dairy Free (Vegan) Cheddar Slices
- 4 large slices organic sourdough or whole wheat bread
- 1-2 teaspoons vegan buttery spread
Directions:
Heat a small sauté pan over medium heat. Add oil and add spinach and dash sea salt, pepper and lemon juice. Cook until spinach is wilted, about 30 seconds to 1 minute. Set aside. To make pimento mayo, in a mixing bowl combine vegan mayonnaise, pimentos, lemon juice, sea salt and pepper. Set aside.Heat a flat pan or griddle over medium heat and add 1-2 teaspoons buttery spread. Add all 4 slices of bread to pan. Add about tablespoon pimento mayo to each piece bread. Top 2 slices of bread with 1 ½ GO Veggie! Cheddar Slices and top with sautéed spinach. Enclose with remaining bread. Grill for 3 minutes. Flip over and continue to cook for 2 minutes or until golden and cheese is melted.
