A very simple, tasty, and extremely healthy gluten and dairy free waffle recipe that will get two thumbs up from people who don’t even know what gluten-free means.
2 cups water
1 tablespoon juice (we used grape juice – to add color)
1 cup oats
1/4 cup millet or cornmeal
1/4 flax seed
1/4 cup raw cashew nuts
2 tablespoon cornstarch (optional – helps keep waffle shape)
1/2 teaspoon salt
Blend all together until smooth consistency. Pop in your waffle maker, and wait!
1 cup of water
3 cups of frozen blueberries
2 tablespoons corn starch (mix 2T with 1/4 cup of water, mix before adding to blueberries)
2 tablespoons evaporated cane juice (sugar)
Stir until thick
Slather all over your waffles!
