Hey Girl, sugar is so 1924. Try these 5 ingredient vegan cinnamon tahini cookies that are gluten, soy, dairy, egg, and preservative free from Jenné Caliborne of Sweet Potato Soul. They are additively simple and you’ll feel zero guilt afterwards. These are also killer for sugar-craving kiddies and high in protein (oats! tahini!)
makes 8 small cookies
- ½ cups tahini
- ¼ cup maple syrup
- 2 tsp cinnamon
- ¾ cup quick cooking oats
- ½ cup chopped walnuts
- pinch of sea salt
- (Expansions: add 2 tbsp chocolate chips, 2 tbsp shredded raw sweet potato, 2 tbsp raisins or cranberries, 1 ripe small banana (mashed or diced))
Mix the tahini, maple syrup and cinnamon well, then add the oats and walnuts. Stir well to combine. Dampen your hands, and scoop 2 or 3 tablespoons into your palm to form into a cookie shape. Place onto a parchment lined baking sheet. Repeat with remaining batter. Bake at 350° for 10 minutes. Allow to cool for 10 minutes before enjoying.
