Whatever your current displeasure, turn your insides into a happy face and make this kale salad for dinner tonight. You’ll feel alive, strong, and vibrant. You’ll poop. You’ll do a happy dance. You may even have better skin when you wake up.
Blossom Du Jour’s Karmic Kale Salad
Serves 6-8
• 4 bunches kale stalks removed and discarded, leaves thinly chopped
• 2 1/2 medium lemons, juiced
• 1/2 cup extra-virgin olive oil
• 2 teaspoons agave
• 1/4 cup pumpkin seeds
• 1/4 cup shredded carrot
• 1/2 cup tahini
• 1/4 cup dried cranberries
• salt to taste
Directions
In a large bowl, add the kale, half of lemon juice, half of olive oil, and a little salt. Massage briskly until the kale is fully coated, about 1-2 minutes. Set aside. In a small bowl, whisk remaining lemon juice with the tahini and oil. Add a pinch of salt, then whisk together. Gently combine the kale, pumpkin seeds, shredded carrot, and cranberries. Pour the tahini dressing over the kale. Toss and serve.
