Want to healthfully protein load at breakfast? De nada, chikadee. Yea, the “do you get enough protein?” question for us vegans is as annoying as it gets. Here’s the answer. But once in a while a hearty dose of plant-based protein first thing in the day gives us a big boost to get going. Like these protein packed pancakes.
Super Duper Strawberry Protein Seed Pancakes
INGREDIENTS
- 2 cups flour – we used organic buckwheat flour, but almond flour will up your protein richter
- 1 tablespoon organic vanilla
- 2 tablespoons baking powder
- 1/8 teaspoon salt
- 1 cup almond or soymilk (we used the extra protein almond milk)
- 1 cup organic applesauce
- 2 mushed bananas
- 1 cup chia seeds
- 1/2 cup hemp seeds
- 1/2 cup chopped organic strawberries
- 1 scoop high quality protein powder (we use Sunwarrior, but health food stores are shelved high with raw vegan protein powder options now)
Mix well, if it doesn’t seem liquidy, add a bit more milk. Toss on pan – preferably using coconut oil, though the organic spray oils work well too – and flip. We’ve gotten our kids off syrup and on to apple butter for their waffles and pancakes Enjoy!
