Feast on Fattoush

Fattoush is a Lebanese dish that’s light on the fat content, easy to make, and beyond tasty.   It’s made with toasted pita, a colorful and tasty array of vegetables and tangy lemon dressing. Sumac is a spice used in Middle Eastern cooking that adds a lemony tart flavor; but in a pinch, you can substitute with lemon juice or vinegar.

Ingredients:

1 whole wheat pita, torn into bite sized pieces
1 tsp. olive oil (for heating bread)
10 cups mesclun greens or romaine lettuce, chopped
1/2 cup parsley
1 cup tomatoes, finely diced
1 cup yellow tomatoes, finely diced
2 cups of cucumbers, finely diced
¼ cup broccoli sprouts (or alfalfa sprouts)
14 oz. artichokes, cut into bite sized pieces
2 tsp. sumac powder (optional)

Lemon Dressing:
juice of one lemon
2 Tbs. of extra virgin olive oil
¼ tsp. salt
¼ tsp. freshly ground black pepper

Directions:

  1. Heat 1 tsp. of olive oil in a heavy skillet; toss in pita and cook over medium heat until crisp.
  2. In a small bowl, whisk together the dressing ingredients.
  3. Place vegetables into a separate large bowl and toss with the dressing; when they are evenly coated sprinkle with sumac powder and toss to coat.
  4. Top salad with the crisp flat bread pieces and enjoy. Serves 2-4.
