The Simplest And Most Delicious Banana Bread Recipe Ever!

You will feel like a billion bucks after getting your potassium, carbohydrates, and natural-sugar rush after imbibing this delicious and ridiculously easy-to-make bread.   This bread tastes divine with a slab of Pumpkin or Apple Butter gobbed on top, but Earth Balance, Marmalade, or nothing at all is perfection too.   And talk about a good hangover food… nothing is yummier. Seriously, a 3rd grader could do this.   And you’ll impress everyone with your “baking” skills to boot.   Plus, this is the kind of recipe where a few of the ingredients are optional.   Note the   ** next to certain ingredients and that means they are not necessary to produce a still-yummo bread.   And it goes without saying that we recommend all ingredients be organic, cuz duh… who wants to ingest chemicals and toxins when they don’t have to?!

Banana Bread

  • 2 1/4 cups whole wheat pastry flour (other flours works too, we just prefer whole wheat)
  • 2 teaspoons Rumsford baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt **
  • 6 tablespoons of apple juice concentrate
  • 2 cups mashed bananas (takes approx 4 mashed bananas)
  • 2 tablespoons of canola or coconut oil
  • 2 teaspoons vanilla extract **
  • equivalent of 2 or 3 Eggs (I use Ener-G, 5 tablespoon water + 3 1/2 teaspoon powder) **
  • 1/3 cup soy/rice/almond/hemp milk **   (Some folks prefer “buttermilk” in this recipe. To make buttermilk, combine 1 cup soymilk with 1 tablespoon of vinegar.)
  • 1/2 cup of chopped nuts or dried berries or vegan chocolate chips of your choice **

Directions:

  1. Preheat oven to 350 degrees F.
  2. Mix all dry ingredients in a large mixing bowl.
  3. Mix bananas, and all wet ingredients in a medium mixing bowl.
  4. Combine the banana mixture with the large bowl containing dry ingredients, and stir well. Add the nuts, if you are doing nuts/ dry berries, and stir well again.
  5. Pour into a greased (we spray coconut oil out of a small spray bottle, but non-stick cooking spray is fine too) 9×5 inch bread pan.
  6. Bake in 325 degree oven for about an hour, or until a toothpick in the middle comes out clean.
  7. Take out of the oven with oven mutts and allow to cool.   Then slice it and pig out.
