Vegan Space Pizza

It’s not rocket science: kids love pizza. And Moms love anything that can be made quickly that their kids will eat. Welcome SPACE PIZZA! This one is vegan and not gluten-free, but you can titrate it easily.

Here’s how:

INGREDIENTS:

  • Package of Daiya Shredded Cheese
  • Red Bell Pepper
  • Package of Nate’s Meatballs
  • Can Organic Tomato Sauce (or DIY sauce)

FOR DOUGH:

  • 1 package of red star yeast
  • 1/2 cup lukewarm water
  • 1 teaspoon salt
  • 2 tablespoons vegetable oil
  • 2 cups all-purpose flour  (or split that into teff flour or chickpea flour to make gluten free)
  • Cornmeal (to sprinkle over pizza crust once rolled out)

HOW TO:

Preheat oven to 450. Mix the pack yeast with the lukewarm water until the yeast is dissolved. Let it stand for two minutes. Then add the salt and vegetable oil and mix it up. Add the flour, and mix.  If it seems too liquidy, add more flour. Roll out the dough, and place on pan or pizza stone. Sprinkle cornmeal all over it then gently pat it in. We just use our cast iron pan – it makes a nice deep dish style pizza. Put it in the oven for 5 minutes, then remove it from the oven. Spoon on sauce evenly, then add cheese and toppings, then pop back in oven for 15 minutes. Voila!

The trick: Get the kids involved in making this. Talk about Saturn’s rings (which according to Wikipedia; “The rings of Saturn are the most extensive planetary ring system of any planet in the Solar System.
