
Tuna-Free Sandwiches
Maybe you are pregs and aren’t doing fish.. maybe you are vegan and don’t want to partake in the mass killing of beautiful fishies and the eradication of our oceans.. or maybe you simply think tuna is icky. Perfect for picnics, lunchboxes, late-night snacks, and pretty much any other time you might need a sandwich, these fish-free hand-holds are delicious, or, if you’re feeling punny, de-fish-ious. (And, let’s be honest, when are we not feeling punny?) Just remember, if you’re making these for a date-night entree, nothing says “I love you” like a diagonal cut. Oh, and in case you didn’t know already… chicken and fish don’t grow on trees.

Serves 6
What You Need:
30 ounces (2 cans) garbanzo beans, drained
1/4 cup red onion, peeled and finely chopped
1/2 cup celery, finely chopped
1/4 teaspoon garlic, minced
1/4 cup dill pickle, finely chopped
2 tablespoons nori seaweed flakes
1 cup vegan mayonnaise
1 teaspoon salt
1/2 teaspoon black pepper, ground
12 slices bread, lightly toasted
6 large, crisp lettuce leaves
12 fresh tomato slices

What You Do:
1. In a large bowl, mash the garbanzo beans with a potato masher or the back of a fork. Fold the onion, celery, garlic, pickle, nori, mayonnaise, salt, and black pepper into the garbanzo beans. Combine thoroughly.
2. Lightly toast the bread. Spread the salad on one slice and stack with a lettuce leaf, two tomato slices, and another slice of bread. Cut sandwiches in half and serve.

OMG! THey serve a sandwich like this at “Pure Luck” in Los Angeles. Better than any tuna salad sammy I;ve ever had :)
Sounds delish. I’m going to make this and try it. Usually I make tempeh salad to sub for tuna but this sounds really good.

Dried dulse would be a good substitute for the nori, though I imagine any seaweed would work.

though I just ate breakfast, this makes me hungry for lunch already! and no tuna free sandwich is complete without sprouts!
I first saw this recipe on VegNews a while back..it is absolutely delicious! And cheap! And it doesn’t leave that disgusting aftertaste (and ramifications) that real tuna leaves.

Delish! Allison, your VegNews column is my absolute favorite column in that magazine. (And since teh mag is all around awesome, that says a LOT.) I’ve been following your recipes (not to mention your wonderful cookies and chocolates — My dad bought me a huge order for Christmas, you may recall) for years. Funny… I made a sandwich like this for dinner the past two nights… I made a “tuna” melt — Daiya Cheddar and my new Panini Press (inspired my new NYC vegan sandwich shop Terri)! Also, I like a little lemon zest or lemon pepper with my “tuna” salad.
What can I substitute for nori seaweed flakes?
@Laura: So glad to hear that you enjoy my column and our goodies so!! I do remember that huge order for you from your dad. Good dads know what their daughters like! =)
@dre: The nori is what gives the “fish-like” taste without the dead fish ingredient. If it’s specifically nori you’re wanting to sub, try dulse. If it’s the seaweed taste you want to avoid, just leave it out, but it won’t be as much like tuna and you’ll be missing out on all the fabulous minerals contained within seaweed.
