:: RECIPE OF THE WEEK ::

Vegan & Gluten-Free Rice Crispy Treats
Makes 12-15 squares.  Want to make more than that? Double the recipe.

  • 5 1/2 cups crispy brown rice cereal (Erewhon brand cereal is cheap and great)
  • 2 Tbsp Earth Balance spread
  • 2 Tbsp Peanut or Almond Butter (salted, creamy)
  • 1 bag Dandies Vegan Marshmallows or one package Sweet & Sara Vegan Mallows. OR if you don’t have marshmellows, use 1 cup brown sugar and 1 cup brown rice syrup.
  • 1/2 tsp salt
  • Optional toppings: vegan chocolate chips, coconut, nuts, dried or freezedried fruit.

Directions:

Place E.Balance and peanut or almond butter in a sauce pan on med-high. Melt. Add marshmallows (or sugar/ brown rice syrup mixture). Stir constantly until marshmallows are about half melted. If using sugar/ brown rice syrup, continue stirring until sugar dissolves.  Reduce heat and add rice cereal. Fold it into heated mixture until cereal is well coated and becomes thick. Transfer mixture into a greased casserole dish. Pat down firmly until flat. Sprinkle with a pinch of salt. Add toppings (optional.) Stick in the fridge until hard, usually about 2 hours. If you want it to harden faster, stick it in the freezer for about an hour. Slice into squares.  Eat or store in fridge.

Rescue contact; sheiser50@yahoo.com Found wandering streets of Camden, NJ with a red collar.  She was held at local kill shelter for seven days, and no one came to get her.  NJAFA found her in Camden and felt responsible for her after her seven days, as she would probably just get euthanized for being a pit in an over crowded county shelter.Since we had spent time with her, we knew she was  a friendly little girl, and very young, about one year, we just had to pull herCurious, not furious about cats, and LOVES strangers and everyone.She must have been loved, because she is healthy and very friendly to everyone she meets. This is one dog that surely deserves a nice home with kids to romp and play with.
