::RECIPE OF THE WEEK::

Mercimek Corbasi (Turkish Red Lentil Soup)

Ingredients

  • 1 onion, diced
  • 2 cloves of garlic, crushed
  • 1 carrot, diced
  • 1 tsp. of olive oil
  • 4 cups of water or veggie stock
  • 1 tbsp. of tomato paste
  • 1 tbsp. of roasted red pepper
  • ½ tsp. of crushed red pepper
  • 1 cup of red lentils
  • 1 tsp. of salt
  • Option: 2 tbsp. of olive oil and 1 tbsp. of sweet paprika as a garnish

Instructions: Dice the onion and carrot. Crush the garlic. Saute the onion and carrot over a medium heat until the onion is slightly browned (about 5 minutes.) Add in the crushed garlic and sauté this for another 3 minutes. Add in the water, tomato paste, roasted red pepper, and crushed red pepper, stirring everything together until it is thoroughly combined. Once the liquid is simmering, add in the lentils. Bring this to a boil and cover the pot. Reduce the heat to low. Cook this for 25 minutes. Remove from the heat. Blend the soup with the tsp. of salt until it is smooth. Option: Heat the olive oil and paprika on a medium heat, stirring them together until they are combined into paprika oil. Allow this to cook for no more than a minute. Swirl the paprika oil onto the finished soup. Low-fat Version (no oil added) Sautee the onion, carrot, and garlic in a thin layer of water instead of olive oil. Variations of mercimek abound all over the Middle East, with the northern Turkish variation using green lentils instead of red.

CAAF recently held an extremely successful Fur-Free Friday protest with approximately 150 people, and the local media even covered the event! Can we count on you to join local activists to keep the momentum going? Posters and leaflets will be provided, so just bring yourself and anyone you can recruit to join you. HACKENSACK, NJ: 4 gorgeous cats need home now: Here’s some info on them: Gabriel is about 5 yrs old and is a beautiful grey and white long haired cat with a glorious plume like tail.  He has adapted to living with 4 other cats even though he is a little shy. Tinker is about 10 years old.  He is healthy and probably more the alpha male than the others.  He is also grey striped and white with a white hour glass marking on his nose.  He is healthy, happy and loving and gets along with all the other cats. Emily is a “roundish” country cat, grey and white bunny like fur.  She has a beautiful face with white fur surrounding one eye and grey surrounding the other.  She likes to burrow under sheets and covers. Last, there is Puddy.  He is also grey and is a little older.  Elena  adopted him from the street around her apt, where he was crying for a few days and frostbitten.  He came back beautifully, but has diabetes.  He takes a small shot of insulin and should be re evaluated for proper care.
