RECIPE OF THE WEEK:

Quick as a whip peanut noodles

They are delish from the Chinese take out spot but are loaded down with white sugar. Try this easy peasy do it yourself batch fora sugar free carb rush. It goes without saying that all ingredients should be organic if possible and that wed prefer you use sugar free peanut butter and whole wheat noodles… but that just may not be your cuppa and who are we to judge?? You can eat these cold or hot.

INGREDIENTS:

  • 2 cups cooked spaghetti or noodles
  • 3 tablespoons creamy peanut butter
  • 2 tablespoons of rice wine vinegar
  • 2 tablespoons of soy sauce
  • 1 tablespoon of OJ
  • 2 tablespoons of water
  • 1 teaspoon minced fresh ginger
  • A sprinkle of red pepper flakes
  • A bunch of sliced green onions and any other veggies you may want to add. If you want to keep it simple the onions are enough.

DIRECTIONS: Mix everything together. It may need a toss on the stove if you want it hot hot hot. Nosh.
