RECIPE OF THE WEEK

Noodle Kugel
shared bythe lovely Colleen of CompassionateCooks. Sometimes translated as “pudding” or “casserole,kugel is traditional Jewish fare, served as a side dish or dessert. There issavory and sweet kugel and a huge variation within each but even the sweet, such as this one here, is served during a meal. Thanks for sharing Colleen and Ari!
Ingredients:
8 ounces eggless egg noodles (kosher for Passover; see below)
1/2 cup non-hydrogenated, nondairy butter, such as Earth Balance, melted
3/4 cup nondairy sour cream
3/4 cup unsweetened applesauce
12 ounces firm tofu, crumbled
3/4 cup sugar
1 teaspoon vanilla extract
1/4 cup raisins
1/4 cup graham cracker crumbs, optional
1 teaspoon ground cinnamon, or to taste
Preheat oven to 350 degrees F. Lightly oil a 9×13- or 9×9-inch bakingdish. Bring a large pot of water to a boil. Cook noodles in boiling water until al dente, about 7 minutes. Drain. In a large bowl, combine the melted butter, sour cream, applesauce, crumbled tofu, sugar, and vanilla extract. Stirin the cooked noodles and raisins. Spread graham cracker crumbs on the bottomof the prepared dish. Pour the noodle mixture over the crumbs. Sprinkle the topwith cinnamon. Bake uncovered for 35-40 minutes. Yield: 12 servings
CompassionateCooks Tips: Though a lot ofpasta is vegan, not all of it is kosher, so for the purposes of serving this at Passover, just look for a kosher brand, such as DeBoles-brand EgglessRibbon-style Pasta, made with Jerusalem artichoke flour. After attending a brunch this weekend andseeing the mass amount of food that was taken back to the kitchen and presumablydumped ““ I was flabbergasted and reminded how much people love to eat only halfof what they are given. Here’s an idea;if you are a light eater ““ order an appetizer only. If your eyes are too big for your stomach,get it packed up and either bring it home to eat later or
feed to your animals(who will be so appreciative, our animals eat human food only after reading this book anyway.) If neither apply, hand itoff to the first homeless person you see on the street, or toss those left overfries into any grass you pass so the birds can feed their bellies on yourdecadent gift. PASS on the love, and your bit. Wasting is for squares.

Since mid-May, storms and severe weather inthe Midwestern U.S. have killed at least 24 people, flooded more than 3.4million acres of land and caused an estimated $6 billion of damage to crops.Flooding prompted President Bush to declare more than 103 counties in Illinois, Iowa and Missouri disaster areas,making them eligible for federal assistance. NYC: Shakespeare in the Parking Lot?!?!
What has twins separated at shipwreck, sexual confusion, fight scenes, belching, music, and my husband playing a pompous you-know-what? Come see Shakespeare’s comedy “Twelfth Night” for FREE at Shakespeare in the Parking Lot (Ludlow and Broome Municipal Parking Lot on the Lower East Side) Thursdays-Saturdays, now through July 19, at 8 PM. Between 60-70 people saw it opening night, and it was very well received. SPL feels somewhat like the traveling troupes of old because the scenery is minimal, the costume changes happen on the fly, and if some driver leaves an SUV in the middle of the stage, well, ya gotta work with it. (OK, so that last part is not particularly ancient.)• Come by 7:30 to be sure to get a chair. Or bring a portable folding chair, or be a groundling. (Tatami mats provided.) • If rain is predicted, bring an umbrella. The show will go on. Exception: thunderstorms bring the show to a booming halt for safety reasons. • Lots of places to get snacks for the show, especially on Broome. (For the vegan or allergy-prone, Babycakes. No affiliation; just appreciation.) • Kids as young as twelve years old (or a precocious ten) will manage pretty well, if given background in advance. • If you haven’t heard Shakespeare lately, your ear will adjust at about 8 minutes. We saved Hope from the localshelter where a good Samaritan found her in the street and took her to safetyat a shelter on Long Island, New York. She has been diagnosedwith possible Infections Distemper. This can be cured and is not contagious.Infections Distemper is contracted by the puppy in the womb.
