RECIPES OF THE WEEK:

**Scones **

Simple, vegan, parve, delicious. If you are a sweets girl; add chocolate chips or raisins tothis recipe. If you are a savory gal, add your favorite grated vegan cheeseor fake meat. I personally like them simple. The Earth Balance adds so much flavor, you’ll be lucky ifyou have one left over. Mange! Makes 24-30 scones

Ingredients:

1 lb whole wheat pastry flour

½ teaspoon salt

1/3 cup room temperate Earth Balance Spread

6 teaspoons baking powder

1 ¼ cups Soy or Rice Milk

Preheat the oven to 425. Sift the flour and salt in a bowl. Add Earth Balance and rub in flour really well. Sift in baking powder, add milk and mixinto spongy dough. Knead and makedough smooth, then cut our scones with 2′ cutter, or roll into lil’ matzoh ballsized balls. Let sit for 10mins. Throw onto greased bakingsheet and bake for 10 mins. Letcool, and stuff your gorgeous face.

**Oprah’s Scrambled Tofu**

Choose what’s good for you, and if it’s good enough forOpie, it’s good enough for us!! Scrambled Tofu is so good, the only thingyou’ll be thinking about is the amazing taste. Eggs are high in cholesterol,which raises your risk of heart attack and stroke.

Ingredients:

16-oz. firm tofu

3 cloves garlic, peeled & sliced

3 Tbs. red bell pepper, diced

2 Tbs. olive oil

1/2 tsp. turmeric

1/2 tsp. salt

1/4 tsp. freshly ground black pepper

3/4 cup green onions, scallions, chives, sliced

1/2 cup onion, minced

2 tsp. soy saucesalsa & corn tortillas (optional)

Directions: Drain and crumble tofu. In a mediumfrying pan, sauté garlic and diced pepper with olive oil on medium heat forabout 2 minutes. Stir in thecrumbled tofu first, then add remaining ingredients. Cook for 3 more minutes, stirring occasionally; serve withsalsa and warm corn tortillas!
