RAW Vegan Cherry Cobbler
A delectable raw food vegan dessert that is good for you! Enjoy to your heart’s content. Compliments of vegan chef Vanessa Sherwood.
*CRUMBLE TOPPING*

- 1 1/2 cups shredded coconut
- 1 1/2 cups walnuts (Optional:
- Soaked and dehydrated to make them dry and crispy. If you don’t have a dehydrator, then simply toast in the oven at 400 degrees for 5 minutes or so, but F.Y.I. — the recipe will no longer be raw.) ;O)
- 1/2 teaspoon salt
- 1/3 cup pitted dates (medjool)*FILLING*
- 3 cups cherries, frozen, thawed and drained
- 1/2 cup pitted dates
- 2 teaspoons lemon juice
- 1/8 teaspoon cinnamon
1. Make the crumble topping: Process all ingredients in a food processor except the dates. Add dates one at a time to form coarse crumbs.
2. Make the filling: In a blender, combine 1 cup cherries with dates, lemon juice and cinnamon. Toss with the remaining 2 cups cherries.
3. Put cherry mixture in a square glass baking dish. Top with crumble topping. Refrigerate until ready to serve. Alternatively, you can put the cherry mixture directly into serving dishes and top with crumble topping.
Serves 3 — recipe can be doubled. Variations: Use frozen blueberries or strawberries

JOIN US for the news conference to support a ban on the use of exotic animals in circuses! During her short life, Angelica has suffered unimaginable horrors. So that she could go on the road to perform with the Ringling Bros. Circus, workers used ropes to prematurely separate baby Angelica from her mother when she was less than 2 years old. The nightmarish ordeal burned her young skin and left visible wounds. In August 2004, activists from San Francisco-based Citizens for Cruelty-Free Circuses captured on videotape that a Ringling handler was hitting and jabbing a chained Angelica with a bullhook. Please join members of PETA and the League of Humane Voters of New York City (LOHV-NYC) on March 18 at 12 noon at Madison Square Garden to help elephants like Angelica. We need to urge the City Council to pass Council Member Rosie Mendez’s Intro 389, which would end the use of elephants and other exotic animals in circuses in the city.

Intro 389 is now a bipartisan effort sponsored by 21 members of the 51-member council. We are only five members short of a majority of support. On March 20, the day Ringling Bros. opens its show in New York, we need you to call your council member and urge him or her to support Intro 389, the bill to ban the use of wild animals in circuses.
