*** RECIPE OF THE WEEK: ***

Sweet Potato and Maple Muffins

1 cup mashed sweet potatoes

1 1/2 cups all-purpose flour

3/4 cup firmly packed brown sugar

2 tsp. baking powder

1 tsp. baking soda

3/4 tsp. cinnamon

1/8 tsp. salt

Egg replacer equivalent of 2 eggs

3/4 cup vegetable oil

1/4 cup maple syrup

1/2 cup chopped pecans

1/2 cup dried cranberries

Preheat the oven to 350°F. Lightly grease a muffin tin.In a large bowl, mix together the sweet potatoes, flour, brown sugar, baking powder, baking soda, cinnamon, and salt. Mix in the egg replacer, oil, and maple syrup. Fold in the pecans and cranberries. Spoon into the prepared muffin tins and bake for 15 minutes, or until the muffins spring back when lightly touched. Makes 1 1/2 dozen. More info.

143 Million Pounds of Beef Recalled in Response to Undercover Video

A harrowing videotape investigation by the Humane Society (HSUS.org) documenting abuse of dairy cows headed to slaughter prompted the USDA to conduct the largest meat recall in US history. Watch it here.
These few dozen cows captured on tape represent an unmeasurably small portion of the 10 billion farm animals slaughtered every year, year after year, in the US alone. Can you imagine the public reaction if there were cameras in every slaughterhouse? Recalling meat is a slap on the wrist to the giant conglomerates that run these factories. Rather than treat animals better, they will likely tighten security and screen new employees more thoroughly. The easiest way to put a stop to this is by thinking twice about what you put at the end of your fork. If you cut animals and their products out of your diet just one day a week that translates to 14 animals a year spared. If a family of four abstains one day a week, that’s over 50 spared. Ask that he not wait for another deadly incident to act-the time to ban this cruel industry is now. New York City’s horse-drawn carriages are subject to very little regulation by agencies that have proved to be incapable of the task. In addition, the horse-drawn carriage industry does the following; Forces horses to work in extreme weather conditions, Poses a public safety hazard since horses “spook” easily and cause accidents, Causes horses to suffer debilitating hoof and leg ailments, Forces horses to breathe in toxic exhaust fumes that can result in lung damage Every year, the list of incidents involving horse-drawn carriages grows longer. Additional rules and monitoring will not make a difference in the lives of these at-risk and dispirited animals. The only humane solution is a permanent ban.
