Recipe of the Week:
Creamy Sweet Potatoes with Almond Butter These sweet potatoes are so yummy and very easy. Who says sweet potatoes are only for the holidays? Makes 2 servings.
Ingredients:
1 medium sized sweet potato, baked
1 TB orange juice
2 TB maple syrup
½ tsp. cinnamon
pinch nutmeg
1 TB creamy almond butter

Directions: Peel and chop the sweet potato. Blend in a food processor along with the orange juice, maple syrup, cinnamon, and nutmeg, until creamy and smooth. Heat gently on the stove or in the microwave. Stir in the almond butter until well-incorporated. For more seasonal recipes, click here
